  • hi I have just made the grown up Italian meringue, it went very well, however I found it hard judging when the sugar was ready without a thermometer, do I cook the sugar over a low heat till its dissolved and then turn up the heat to reach the rolling boil, or do I just keep it on a medium heat all the way through. The first bach I made sugar decorations as it went to the colour of golden syrup, in the 5 minutes. I found the buttercream soft didn’t look as thick as yours, but it firmed up in the fridge… tastes awesome, made chocolate with coco and vanilla it looked so white my friend who hates cream thought it was made with double cream so great success, thank you for the recipe.
